How to Make Roasted Vegetable Stacks

It may be the end of summer, but here in Southern California we are lucky enough to enjoy a longer tomato season. What better way to celebrate fresh produce than with a dish that lets the vegetables shine?
Layers of juicy tomatoes, tender eggplant, golden zucchini, and melted mozzarella come together to create the ultimate vegetable stack. This dish is simple yet nutritious and can be served as a side, main course, or appetizer for guests!

Ingredients
1 eggplant
1 large green zucchini
1 large yellow squash
1 large ripe tomato
2-3 slices mozzarella
Handful of basil
Olive oil
Salt & pepper
Instructions
Preheat oven to 375 degrees.
Slice eggplant about ¼ inch thick, sprinkle with salt, and set aside. Slice the squashes and tomato about ¼ inch thick.
Coat the bottom of a large frying pan with olive oil, heat over medium. Season the squash with salt and pepper. In a single layer, saute the squash until golden, then flip and cook another couple of minutes. Remove the squash to a paper-towel-lined sheet pan. Continue cooking all the squash. Add more oil to the pan as necessary, then cook the eggplant.
Using a ring mold on a parchment-lined sheet pan, stack the vegetables, including the tomatoes, slices of mozzarella, and basil leaves. Gently remove the ring mold and bake for 20 minutes until the cheese is melted and the vegetables are heated through.
